Gone in Sixty Seconds

INGREDIENTS
1 cup Pecans, chopped
1 package (3 oz size) cream cheese, softened
1/4 cup mayonnaise
1 cup cheddar cheese, shredded
1/4 cup green onion, chopped
1 jar Austin Pepper Jam

PREPARATION
Combine ingredients and pack in a shallow bowl or mold. Refrigerate overnight. When ready to serve, turn mold over onto a serving plate. Cover with Austin Pepper Jam.
I use Austin Pepper Jam, but using any flavor of Austin Jam Company pepper jam will work. Serve with crackers.


Spicy Party Meatballs
Makes 8 dozen

INGREDIENTS
1 (12 oz) jar of cocktail sauce
1 (6 oz) jar of Austin Pepper Jam
1/2 small sweet onion, minced
1/2 (3lb) package of frozen-cooked meatballs

PREPARATION
Cook first 3 ingredients in a Dutch oven over medium heat, stirring until jam melts and mixture is smooth. Stir in meatballs. Reduce heat and simmer, stirring occasionally. 35 to 40 minutes or until thoroughly heated.


Joy's Famous Pepper Jam Cheese Ball

INGREDIENTS
8 oz. pkg. Philadelphia Cream Cheese (soft)
1/4 cup fine chopped green bell pepper
2 Tablespoons grated onion
1 Tablespoon pimento chopped fine
1 small can crushed pineapple-drained of all juice
1/4 teaspoon seasoning salt
3 Tablespoons Austin Jam Co.’s Pepper Jam (more or less to your taste.) I used Pineapple but any would be good.

PREPARATION
Mix all ingredients into the cream cheese. Form into ball and roll in chopped nuts. I used walnuts. You may need to chill before forming into ball.


Dawn’s Pepper Jam Pinwheels

INGREDIENTS
2 cans of crescent rolls
1 jar of your favorite pepper jam
1 block of cream cheese, room temperature

PREPARATION
Roll the crescent rolls out so they make a square. Spread the cream cheese on the crescent rolls. Spread a layer of jam on the top and roll the crescent rolls up. Slice into 1” circles and back until golden brown at 350 degrees.


Deenie’s Cheese Bake

INGREDIENTS
1 - 8 oz cream cheese, softened
1/2 cup mayo
1 cup sharp cheddar cheese, grated
2 green onions chopped

PREPARATION
Mix mayo, cream cheese, cheddar and onion in a greased quiche or pie pan.
Top with:
6 or 1/2 sleeve Ritz Crackers crushed

Bake 350 for 15 min.
Top with 8 slices cooked crumbled bacon and 1/2 cup pepper jam
Bake at 350 for 15 more minutes
Serve with Wheat Thins, Triscuits or any cracker of your choosing.


Potato Chips with Goat Cheese, Austin Pepper Jam & Bacon
Servings: 12

INGREDIENTS
6 ounces sliced bacon
36 thick-cut potato chips
5 ounces fresh goat cheese, softened
3 tablespoons Austin Pepper Jam
1 tablespoon snipped chives

PREPARATION
1. In a large skillet, cook the sliced bacon over high heat until crisp. Drain, cool and crumble the bacon.
2. Arrange the potato chips on a serving platter. Spread or pipe 1 teaspoon of the goat cheese onto each potato chip. Top with a small dollop of the pepper jam, sprinkle with the bacon and chives and serve right away.

Onion Rings with Sweet Heat Dipping Sauce

Purchase frozen onion rings and bake as directed.

INGREDIENTS
1/2 Cup Austin Pepper Jam (or your choice of flavors)
1/4 Cup Ketchup
2 Tbs. Apple cider Vinegar

PREPARATION
Place Pepper Jam in a microwave safe bowl and heat on high for 30 seconds. Add remaining ingredients and whisk together. Serve and enjoy with the onion rings.

Pepper Jam Appetizer

INGREDIENTS
1 (8 ounce) package cream cheese, softened
1/2 cup Austin Jam Co. pepper jam (use your favorite flavor)

DIRECTIONS
Spread pepper jam over the block of cream cheese. Serve with your favorite crackers. A cracker that does not tend to crumble works best – example: Wheat Thins.
